Flavours from the Forest and the Harvest
Riistapeijaiset brings together food lovers, wild food professionals, local producers and the finest northern ingredients. For two days, Restaurant Zone will be filled with tastings, live demonstrations, stories and the relaxed atmosphere of a traditional northern feast.
Despite its name, Riistapeijaiset is about much more than wild game. It is a celebration of the northern harvest in all its autumn abundance, featuring game, fish, mushrooms, berries, vegetables and other ingredients gathered from nature.
Come and explore, taste the flavours and meet the professionals behind them. Watch live demonstrations, pick up useful ideas for your own kitchen and try your hand at preparing something yourself.
Action in the Demonstration Kitchen
Chef Matti Hurttia returns as the long-standing host and driving force behind Riistapeijaiset event. A seasoned festival veteran and quick-witted showman, he ensures that the demonstration kitchen serves up lively conversation, surprises and plenty of good humour alongside delicious food.
Friday’s wild food show will feature Martin Hägglund from Riista-Ateljee. An experienced game specialist, hunter, chef, butcher and outdoorsman, Hägglund will prepare elk croquettes with accompaniments in front of the audience while sharing practical advice on handling and cooking wild game.
The programme will also feature television chef Janne Pekkala and Rukapalvelu’s Head Chef Markku Käyhty.
Arto Määttä will guide audiences through the preparation of fish. His demonstrations will show how to clean and prepare fish neatly while making the most of every part. Along the way, visitors will receive practical tips for both the home kitchen and outdoor adventures.
Preserving the Flavours of Autumn
At the Rajamäki Pickling Studio, visitors can do more than simply watch. Matti Hurttia will demonstrate how vinegar, spices and a few clever techniques can transform seasonal ingredients into delicious preserves. Every participant can make their own pickled product and take the jar home.
Kujala Reindeer Farm will bring a taste of local reindeer herding to Riistapeijaiset. Visitors can discover the farm’s products and hear stories about reindeer, herding traditions and the work that takes place before a local ingredient reaches the kitchen and the plate.
Come and meet the producers, ask questions and learn more about reindeer meat and the farm’s other products directly from the people behind them.
Food is at the heart of Riistapeijaiset. The Wild Game Buffet will be served on both evenings from 6 to 9 pm.
